Concepts
  • Local: Spend money in our community, support local businesses and our local economy; recognize the people who produce our food and promote these local identities
  • Seasonal: What is available now is freshest, better tasting and more nutritious; respect the rhythm of the seasons
  • Sustainability: No driving, flying, etc. leaves a smaller eco-footprint; support responsible resource management, moderate consumption and reduce environmental impact; encourage local production and distribution
  • Organic whenever possible: fresh, seasonal produce without the use of harmful pesticides and fertilizers; no genetically modified or engineered foods
  • Chef’s involvement and partnership with the Market: makes a direct and meaningful impact on the local community and economy; allows chef to connect more personally with the food; gives attention to the selection and proper use of raw ingredients, how the food is prepared and simple, seasonal flavors
  • Creating an experience and providing an education: Food as a social event; focus on the sensory stimuli food provides as it is consumed, the way it is presented and the company with whom we share it; open a dialog/provide a setting for people interested in understanding where their food comes from

Farm-to-Table Dinners
  • Dining will take place in the Plaza View Banquet Room in historic Jacoby’s Storehouse, cornerstone of the Arcata Plaza
  • Reservations will be limited to 40 seats per event
  • The banquet room will be arranged with five tables, each seating eight people
  • Each event will open with a Meet-and-Greet and no-host bar
  • Each dinner will include seven courses. An optional wine pairing will also be available.
